Butter cookies

Time: 30-45 mins


Ingredients:
2 cups Maida (all purpose flour)
1 cup fine sugar
pinch of salt
Ghee or oil


Method:
Mix maida, sugar and salt with ghee.
With your hand roll the above mix like roti. With the cookies cutter or any bottle cap cut into desired shapes.
Arrange them on a baking sheet and bake them on 150oC for 10min.
Cool and serve any time.

Masala Khichari

Time: 15-30 mins Servings: 5

Ingredients:
350 g - basmati rice100 g - dal, masoor (red gram)small size - cauliflower, cut into chunky flowerettes100 g - small size baby onion (whole)50 g - potatoes50 g - peas, shelled or frozen50 g - tomatoes50 g - carrot2 tsp - grated coriander leaves10 g - ginger6 to 8 flakes - garlic2 sticks - cinnamon2 to 4 - cardamom2 - bay leaf (tej patta)50 g - ghee50 g - refine oil4 to 5 - green chillies1.5 tsp - turmeric powdersalt to taste


Method:
Wash rice and dal together and keep aside.
Crush garlic, ginger, cinnamon and cardamom together.
Cut all above vegetables into cube size, wash and keep aside.
Chop tomatoes. Heat ghee and refined oil in a pressure cooker, add bay leaf (tej patta), crushed masala and stir for few seconds.
Add all the above vegetables including baby onion (whole) and split green chilies and stir for few minutes.
Add chopped tomatoes, peas and turmeric powder and fry for five minutes.
Now add soaked rice and dal and stir well.
Add hot water and salt to taste into it (amount of water should be double the rice).
Cover it, reduce heat cook it on low flame.
When rice is done, remove from fire, remove lid and add grated coriander leaves and pour two tbsp of ghee evenly over khechuri and serve hot.

Bataka Poha (Aloo Poha)

Thanks for stopping by and reading my blog. This is my first blog ever and I am starting with something which is my passion - cooking and recipes.
As I am gujarati, I have access to lot of gujarati recipes which I plan to share with everyone here. I have learnt lot of great dishes from my didi who lives in Surat, Gujarat. My didi is a professional who distributes variety of food items to different restaurants in and around Surat.
Let us start with the first recipe. I am trying Gujarati Language with Hindi Script. Hope it will be readble.

सामग्री:
२०० gm बटाका
३ टेबल स्पून तेल
१/२ टी स्पून राई
१ टी स्पून तल
४ झीणा समारेला मर्चा
मीठो लिमदो
१/२ टी स्पून हलदर
२ टेबल स्पून खांड
१ लिम्बू
३०० gm पोहा
४ टेबल स्पून जिनी समारेली कोथमीर
२ टेबल स्पून कोपरानी छिन
२ दुंगली
मिठु प्रमानसर

रित:
१. बटाका ने छोली ने तेना नाना टुकडा करावा
२. एक वासन माँ तेल मुकी राई तल लीला मर्चा मीठो लिमदो ताज लविंग नो भुको नाखी बटाका वघरावा. हालदार आने मिठु नाखावा। ढाकिने चडावा देवू.
३. बटाका चढी जाय एटले खांड अने लिम्बू नाखावा. पोहा धोई चलानी माँ काढावा आने बटाका माँ नाखावा. ४. तेमा काजू द्राक्ष नाखवा. बाकिनु मिठु नाखवु. बराबर हलावी निचे उतारी दिश्मा बटाका पोहा काढी तेना पर कोथमीर आने कोपरानी छिल भभराववु.
